Tomato-Zucchini Medley

This light and healthy side dish uses fresh summer vegetables.

  • 2 T. butter or margerine
  • 3 medium zucchini - sliced
  • 1/3 cup chopped onion
  • 2 medium tomatoes, peeled and cut into wedges
  • 1/2 tsp. basil
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

Preparation -
Melt the butter in a skillet. Add the zucchini and onion. Cook and stir over medium heat until the zucchini are tender crisp. Add the tomato wedges and seasonings. Cook just until the tomatoes are heated through.
