Easy Eggplant Stir Fry Recipe

The eggplant has been a part of Chinese cuisine for years. It has a wonderful rich flavor and texture and is capable of absorbing the flavors of whatever it is cooked with. The recipe below is a delicious example of how eggplant can be flavored with just a bit of sauce. Plain eggplant stir fried with a little soy sauce makes an amazing complement to any meal, or even a great day time snack. In addition, adding eggplant to stews and stir fries gives these dishes an extra richness and warmth that the whole family will enjoy.

Eggplant can usually be found in the produce section of your local grocery store. When choosing an eggplant look for shiny deep purple skin with no blemishes. Also, very gently squeeze the eggplant to make sure that there are no soft spots. Be certain to choose an eggplant that is very firm and smooth. Once purchased, it is easy to prepare. Simply rinse it under cold running water, cut off and discard both of the end pieces, and then cut it into pieces as directed by the recipe.

Eggplant is also amazingly healthy. It is known to aid in lowering cholesterol, and is a fibrous low calorie food. One large eggplant, as used in the recipe below, is only about 140 calories. Plus, one half of this eggplant is enough to make someone feel as if they consumed an entire meal. The entire recipe below is less than 300 calories and makes a wonderful and healthy snack or side dish. Try t his recipe for yourself and let me know what you think in the Chinese food forum. Enjoy!

1 large egg plant
1 tbsp peanut oil
4 tbsp soy sauce

  1. Prepare the eggplant by first rinsing it under cold water. Then dry it with paper towels and cut off and discard the ends. Slice the rest of the eggplant into ½ inch or so thick round slices and then cut the slices into quarters so that you have small pieces.

  2. Once the eggplant has been cut into pieces, heat a large non stick pan or wok on high. Add the oil and swirl it around the wok to coat the bottom. Make sure that the oil is hot and then add the eggplant and stir fry it for 3 minutes.

  3. Add the soy sauce and stir fry for another 3 minutes. Remove from heat and serve.

  4. Makes about 3 side servings.
