Pepper Steak Recipe

¾ lb lean beef (preferably tenderloin)
1 green bell pepper
¼ white onion
1 small carrot
1 tsp cornstarch
2 tbsp peanut oil

Marinade:
¼ tsp garlic salt
1 tsp sherry
1 tsp cornstarch
1 tsp peanut oil

Sauce:
1/3 cup beef broth
1 tbsp soy sauce
1 tsp sherry
½ tsp sugar

  1. Remove as much fat from the meat as possible and then cut it into thin slices.

  2. Place these slices in a bowl and add all of the ingredients for the marinade. Then using your hand mix everything together thoroughly. Let the meat marinate at room temperature for 20 minutes.

  3. While the meat marinates prepare the other ingredients. Cut the green pepper in half and remove the stem and the inner white meat. Rinse the halves under cold running water and dry them thoroughly with paper towels. Then cut each half into ½ inch to 1 inch squares and set them aside.

  4. Remove the skin from the onion and cut it into squares about the same size as the pepper.

  5. Peel the carrot. Then slice it on a diagonal into thin slices and set them aside.

  6. Next prepare the sauce. In a large cup, mix together all of the ingredients for the sauce.

  7. In a small cup, mix the cornstarch with just a little water until it dissolves. This will be the thickener for the sauce.

  8. Once the beef marinates, cook it using the velveting boiling method. Bring a pot of water with 1 tablespoon of the peanut oil to a boil. Once it boils add the meat and let it cook for just 30 seconds. Then remove it with a slotted spoon and set it aside. Make sure to drain off all of the excess water.

  9. Next, heat a wok on high. Then add the remaining tablespoon of peanut oil and let it get hot.

  10. Once the oil is hot, add the pepper, onion and carrot. Stir fry the vegetables for about 4 minutes, or just until crisp-tender.

  11. Add in the beef and stir fry everything for another 30 seconds.

  12. Then add the sauce and let come to a boil.

  13. Once the sauce starts to come to a boil add the cornstarch mixture and stir until the sauce thickens.

  14. When the sauce thickens remove it from the heat and serve. This is best served with a side of fried rice. Makes 2 servings.
