This is a wonderful treat that's great for anytime of the day!


  • 2 cups milk

  • 3 1/2 oz. can of flaked coconut

  • 2 cups of hot coffee

  • 1/4 cup rum extract

  • Whipped cream



In a medium size saucepan mix milk and can of coconut flakes. Heat milk mix on medium-low heat until steam rises, stirring often. When milk mix is hot pour it into a blender and blend until creamy and smooth.

Pour blended milk back into saucepan and add the hot coffee. Heat only until mix is hot and steam rises. Do not boil. When hot, remove from heat and gently stir in the rum extract.

Pour into cups. Put a nice big dollop of whipped cream on the top and serve.

For a fancy cup try gently shaking cocoa powder over the whipped cream or chocolate shavings. You can also toast a bit of coconut and sprinkle over the whipped cream as well. To be extra fancy try shaking a smidgeon of cocoa powder on the whipped cream, sprinkle chocolate shavings over the cocoa powder and then sprinkle powdered sugar over the chocolate shavings. This comes out looking marvelous and guests are usually quite impressed.
