Biosphere that is Wild Wood Spa- Resort,India
The entire 22 acres of Wild Wood Spa is planted today, with a mind boggling variety of trees and floral plants. All the fruit that one could possibly desire grows there in plenty. Infact just walking out of the restaurant I was stunned to see a Rambutan which grows profusely in the more humid areas of Asia, fruiting heavily alongside the entrance.For a fruit fiend, my romance with fruit was satiated at the resort.

“ Go a little further and you will see our Star fruit which are heavily in fruit at the moment,” said KP Shetty the owner and off we went to collect a small packet of the riper, yellower fruit. Bringing it back to the restaurant I was able to advise one of the more amiable chefs to turn them into a refreshing juice. He sliced them into four and quickly put them into a pressure cooker with a little water. After just one whistle he let it cool and then blended the softened fruit in a blender till really smooth. Then straining it off any fibres, he added sugar and salt to taste and warmed again till the sugar melted. The concentrate juice can be drunk chilled and preferably finished in a day or two, as no preservatives are added.

The trees across the property had heaps of star-fruit and rather than drinking chemically made juices, the star-fruit drink which is a burst of Vitamin C was drunk down by us in a trice. “ I have lots of trees across the property,” said Shetty and he was sure that his guests would enjoy the healthy drink along with breakfast, lunch or dinner.

The Jack-fruit trees too were heavy with fruit which were taken off, when they began to lightly smell, showing they were ripe. These large fruit were cut open and laid out on the fruit stand for anyone who wanted to binge on the Jack-fruit pods. The trees on the property are still young and it will take a while before the pods become really heavy and meaty, as the tree ages.

Large Mulberry trees too were heavy with fruit. The gardener was instructed to remove only the long, black, fully ripened fruit. Almost an inch long, he brought us the mulberries on a piece of banana leaf, making the offering rather pretty, the green of the leaf, setting off the luscious black mulberries, nestled in it. Again the chef was instructed as to how to make a delicious and fresh mulberry jam, just quickly boiling the fruit with an equal quantity of sugar and throwing in some cinnamon sticks for flavour.

Again this mulberry jam can be eaten on toast or like we do in India with freshly fried chappaties, just off the pan. This jam has no preservative again and is not only delicious, but good for us with its fresh fruit content. There are plenty of trees across the property for both the birds and humans to share the fruit!

On the Butterfly walkway, which is scenically along the river, Shetty has had a lot of host plants put into the ground, to flourish and flower for the butterflies to sip nectar from. All along the walkway he has grown flowering vines which hang over a long pergola and again, nectar bearing flowers hang low. One just has to walk with a camera and in minutes you can snap the most wonderful shots of colourful butterflies. They tend to be slower here, taking their time sipping and flitting among the flowers in this area.

Bougainvillea in all the colours possible, bloom across the property. Shetty has brought them in from Indonesia and other Asian countries and they all happily bloom and grow under his indulgent care, in the biosphere. A strange orange, a bright pink, a double coloured variety, they are all there growing in profusion and flowering abundantly. One variety has differently coloured leaves too. The whole place is alive with colour and light of course floral scents fill the air.
