Ethnic Foods of Hawaii - Revised Edition Published by Bess Press

This paperback book is written and illustrated by Ann Kondo Corum and features176 pages of information and history on the foods and topics related to foods of various cultures found in Hawaii including cooking and celebrations. Recipes can be found within each section.

The various cultures addressed in this book are: Hawaiian, Chinese, Japanese, Okinawan, Portuguese, Puerto Rican, Korean, Filipino, Samoan, Thai and Vietnamese. There is also a Glossary, Bibliography, Index and Recipe indexes by Category and by Ethnic Group.

Some of the wonderful recipes offered include: Char Siu, Embutido, Laulau, Sukiyaki, Kogi Guk (Beef Soup), Salmon Udon, Piri-Piri Chicken, Paella, Banana Poi, Kanom Sam Kloe and Papaya Soup to name a few of the mouth watering dishes.

You will read about the legend of the coconut in the Samoan section and how "fornos" (outdoor stone ovens) were built by the Portuguese families and many more interesting topics. This is a wonderful introduction to the cultural influences and recipes of the people of Hawaii for anyone.
