Sunday Brunch

Guest Author - Amelia Johnson

Sunday mornings are a time for rest and reflection. That being said, throwing a Sunday brunch should be just as easy. Follow these tips for a successful omelette party.

The Invites:
-Casual invites for this simple party are a must. Give your hand a rest and call your guests to invite them over.

The Decoration:
-Since brunch will be all about the food, let it take center stage. Show off your meal with a mix of colorful plates, bowls, and glasses. You can mix and match dinnerware at discount stores for very reasonable prices.

Music:
-For this type of party, expect to encourage conversation. Play cheerful, instrumental music softly in the background to put your guests at ease.

The Setup:

-Cover your counter or dining table with a tablecloth, length of calico (from a fabric supply store), or something decorative such as an outdoor flag.

-Place ingredients in decorative bowls along the center of the table. Crack several eggs into large bowls and sit on either end of the table, making sure to include spoons in each bowl just big enough for one serving of eggs.

-Place the other ingredients in between in decorative bowls.

Suggested ingredients for omelettes:

-Asparagus (precooked)
-Ricotta cheese
-Mushrooms
-Ham, Turkey, or Chicken (cooked, diced)
-Olives
-Tomatoes
-Bell Pepper
-Onion
-Diced, cooked potato
-Salsa
-Baby Shrimp
-Spinach
-Bacon or Sausage (precooked, small pieces)
-Cheese
-Salt, Pepper, other spices

Directions:

-Have each guest place one omelette size serving of eggs into a quart size Ziploc bag. Have the guest customize their own omelettes by adding ingredients from the buffet table to the bags (minus the cheese) and mixing the ingredients by squeezing lightly by hand.

-Remove as much air as possible from the bag and label with each guestís name.

-Drop bags 3 or 4 at a time (depending on the size of the pot) into a pot of boiling water. Spaghetti/Stock pots work well. Boil omelettes 8-10 minutes or until done.

-Carefully remove bags with tongs and place on plates. Cut open bag using scissors. The omelette should slide right onto the plate. Sprinkle with cheese and serve.

_Serve with biscuits or croissants and fresh fruit.

The Recipe:

Biscuit Recipe:
2c all purpose flour
4tsp baking powder
1tbsp granulated sugar
1tsp salt
1/3 c butter or margarine (be sure itís cold)
ĺ c milk

-Preheat oven to 425F. Mix dry ingredients in a bowl.

-Cut in butter with a fork, until mixture is crumbly.

-Add milk and stir until it forms a ball. Add milk by teaspoonfuls if necessary.

-Roll or pat out to 1 inch thick.

-Cut into circles using a cutter or glass rim dipped in flour.

-Arrange on a greased baking sheet and bake at 425 for 10-12 minutes or until biscuits are golden brown.
