Beef and Asparagus Stir Fry Recipe
This beef and asparagus stir fry is a great way to incorporate healthy vegetables into you family’s dinner. Asparagus are best when purchased in the spring; and when tossed with lean sliced beef in a delicious savory sauce make a great healthy meal.

1.5 lbs. lean beef
¼ tsp garlic salt
¾ lb. asparagus
1 clove garlic
2 tbsp peanut oil

Sauce:
½ cup beef broth
½ tbsp soy sauce
½ tsp sugar
¼ tsp crushed red pepper
½ tbsp cornstarch

  1. Remove any excess fat from the beef and then slice it across the grain into thin long pieces. Then lightly sprinkle these beef slices with the garlic salt and let it sit at room temperature while preparing the other ingredients.

  2. Rinse and dry the asparagus thoroughly. Next take one of the asparagus and find it’s “breaking point” (where the end should be broken off and discarded) by slowly bending it near the bottom of the stalk. Where it breaks is the point where you want to cut each asparagus and discard the bottom.

  3. Then cut the remaining stalks on a diagonal and set them aside.

  4. Using the side of a knife, carefully smash the garlic clove and peel it. Then dice it and set it aside.

  5. Next in a cup mix together all of the ingredients for the sauce except for the cornstarch.

  6. Then in a small cup mix the cornstarch with just a little cold water and stir until it dissolves.

  7. Next heat a wok on high. When it is hot add one tablespoon of the peanut oil and let it get hot.

  8. When the oil is hot, add the beef and stir fry it for about 2 ½ to 3 minutes, or just until it is cooked and still slightly pink in the center of the slices. Then remove it from the wok and place it on a plate and set it aside.

  9. Next, if there are any brown bits in the wok wipe them out and add the remaining tablespoon of peanut oil. Heat this on high.

  10. Once hot add the asparagus and stir fry it for about 1 ½ minutes, or until crisp – tender.

  11. Then add the sauce bring it to a boil. When it boils, give the cornstarch mixture a little stir and then add it in, stirring constantly until the sauce thickens.

  12. Then return the beef to the wok and stir until the beef is heated through and coated with the sauce. Serve immediately. This is delicious served on top of white steamed rice, enjoy.
