Chicken and Celery Stir Fry Recipe
Lightly browned pieces of chicken stir fried with thin sliced celery in a light and savory sauce makes a healthy and delicious meal that the whole family will love. This is best served alongside white steamed rice, enjoy.

1.5 lbs. boneless skinless chicken breasts
½ tsp garlic salt
5 stalks of celery
1 clove garlic
2 tbsp peanut oil
1 tsp crushed red pepper
2 tbsp soy sauce

  1. Remove any excess fat from the chicken and then cut it into ¾ inch square pieces and sprinkle them evenly with the garlic salt. Let them marinate at room temperature while preparing the other ingredients.

  2. Cut the ends off the celery and discard. Then rinse each stalk thoroughly and dry with paper towels. Cut the remaining stalks on the diagonal into thin slices and set them aside.

  3. Next peel the garlic by lightly smashing it with the side of a knife. Then mince it and set it aside.

  4. Then heat a wok on high. Once the wok is hot add just one tablespoon of the peanut oil and let it get hot.

  5. When the oil is hot add the chicken and stir fry it for 5 to 7 minutes, or until the pieces are lightly brown. Then remove them from the wok and place them on a plate and set them aside.

  6. Next wipe any brown bits out of the wok and add the remaining tablespoon of peanut oil. Let this oil get hot.

  7. When the oil is hot add the garlic and stir fry it for just 10 seconds making sure that it does not burn. If it does burn by accident, make sure to rinse it out of the wok and then start this process over.

  8. After frying the garlic for 10 seconds add the celery and stir fry for 1 minute.

  9. Then add the crushed red pepper and one tablespoon of the soy sauce and stir fry another 30 seconds.

  10. Then return the chicken to the wok and add the remaining tablespoon of soy sauce and cook until everything is mixed together and heated through, about 1 minute. Then it is ready to serve. This makes about three servings of chicken and celery stir fry and is delicious served on top of white steamed rice, enjoy.
