Vegetable filled Lettuce Wraps Recipe

These lettuce wraps are filled with fresh diced vegetables and are very easy to make. The most time consuming part is dicing all the vegetables for the filling. This can be done ahead of time and the vegetables can be stored in the refrigerator overnight. 1 head romaine lettuce (iceberg or bib can be used as well)
2 corncobs
½ purple onion
1 red bell pepper
1 green bell pepper
1 cucumber
1 cup pre shredded carrots
1 tablespoon seasoned rice vinegar
1 tablespoon evoo (or peanut oil)
salt and pepper

  1. Start by rinsing the lettuce leaves and drying them thoroughly. Then set them in the refrigerator on a plate lined with a towel.

  2. Next blanch the corncobs by bringing a large pot of water to boil. Then add the corn and turn the heat down to medium, or so that they are just boiling and let them cook for just 6 minutes. Then carefully place them on a plate to cool.

  3. Once they are cool to the touch use a knife and cut off the kernels. I usually stand the cob on its flat end and cut downward. The kernels will come off in chunks. Just break these up using your hands. Then place them in a large bowl and put them in the refrigerator so that they cool completely.

  4. Peel and dice the half of red onion.

  5. Then rinse and thoroughly dry the both of the bell peppers. Cut them in half removing their stems, seeds, and inner white meat; and then dice them and set them with the red onion.

  6. Next peel the cucumber and then slice it in half lengthwise. Use a spoon or knife to remove the seeds. Then dice it and set it with the other vegetables.

  7. Measure out the pre shredded carrots. These can usually be found in the produce section of most local grocery stores.

  8. Once all the vegetables are cut, place them in the large bowl that has been in the refrigerator with the corn. Then toss everything together.

  9. Next add the seasoned rice, extra virgin olive oil, and salt and pepper. Stir until everything is mixed thoroughly and then taste. Add more seasoning to fit your preferences and then it is ready to be put in the lettuce leaves.

  10. Take a lettuce leaf and add some mixture to the center. The romaine lettuce makes a great presentation because it is long and the vegetable mixture is placed in the center. Then it can be eaten by simply rolling up the sides like a burrito, enjoy! This recipe makes 15 to 20 vegetable filled lettuce wraps.
