Chinese Soy Sauce Noodles Recipe
Chinese soy sauce noodles are a delicious dish perfect for the colder months. These thin noodles are stir fried with bean sprouts and green onion and tossed in a delicious soy sauce based sauce.

The dried egg noodles can be found in most Chinese grocery stores. They are usually packaged in round or oval shaped “nests” inside the package. Sometimes they are labeled “Hong Kong” noodles. If you can’t find these noodles you can use regular vermicelli as well.

Makes about 4 servings

Ingredients:
8oz dried thin Chinese egg noodles
1 cup fresh bean sprouts
3 green onions
3 tbsp peanut oil
1 tbsp toasted sesame seeds

Sauce Ingredients:
1 tbsp regular soy sauce
1/2 tbsp dark soy sauce
1/2 tsp sesame oil
1/2 tsp sugar
1/4 tsp white pepper

  1. Boil the noodles according to the package instructions and then drain them thoroughly in a colander. Once drained, add 1 tablespoon of the peanut oil and stir it into the noodles and let them sit while preparing the other ingredients.

  2. Rinse the bean sprouts under cold running water and drain them thoroughly. Use a paper towel to blot them dry.

  3. Next rinse and thoroughly dry the green onions. Then cut off the bases and any wilted tops and discard. Then julienne the remaining stalks.

  4. Then in a small cup mix together all of the sauce ingredients and set it aside.

  5. Next heat a wok on high and let it get hot. Once hot, add one tablespoon of the peanut oil and let it get hot.

  6. When the oil is hot add the green onions and the beansprouts and stir fry for 1 minute, or just until the bean sprouts are just crisp- tender. Then remove them and place them on a plate and set them aside.

  7. Add the remaining tablespoon of the peanut oil and let it get hot.

  8. Then add the noodles and stir fry for 20 seconds, or until warm.

  9. Then slowly add the sauce mixture stirring the noodles constantly so that they become evenly coated with the sauce. Stir fry for 1 minute.

  10. Then add the bean sprouts and green onions and stir until everything is mixed together. Stir fry for another minute. Then remove it from the heat and serve immediately. Sprinkle the noodles with the toasted sesame seeds right before serving, enjoy. This makes about 4 servings of Chinese soy sauce noodles.
