Steamed Sweet Chili Chicken Sandwich Recipe
Ingredients:
3 boneless skinless chicken breasts
1/2 tsp garlic salt
10 green onions
4 large green lettuce leaves
1 tbsp peanut oil
3 tbsp sweet chili sauce plus more for coating the buns (preferably Maggies brand)
½ cup shredded carrots
1 can Pillsbury Buttermilk Home-style biscuits

Utensils:
Steamer
wax paper

  1. First prepare the chicken. Remove any excess fat and cut each breast into thin 1 inch pieces and place them in a bowl. Then add the garlic salt, making sure to evenly distribute it through out the pieces of chicken. Let this sit at room temperature while preparing the other ingredients.

  2. Clean the green onions and then chop them into 1 inch long pieces.

  3. Cut the lettuce leaves in half.

  4. Then cut the wax paper into 3inch squares. Make 8 squares, one for each biscuit when steamed.

  5. Next cook the chicken by first heating a wok on high and then add the peanut oil, swirling it around the pan.

  6. When the oil is hot add the chicken pieces and stir fry them for 5 minutes, or until they slightly brown.

  7. Then add the sweet chili sauce and stir fry until it coats the chicken. Then remove it from the heat and begin steaming the biscuits/buns.

  8. Add water to the steamer and heat it on high.

  9. While the water is heating, prepare the biscuits by taking each one and stretching/rolling it until it is about 3 ½ to 4 inches in diameter. **Make sure to lightly roll them and not press very hard. This should be more of a stretching action. If you press too hard the buns will end up being chewy instead of fluffy after steaming.**

  10. Once stretched, gently fold them in half without pressing the bun closed. The easiest way to do this is by placing a chopstick in the center, folding the bun over it, and then gently removing the chopstick.

  11. Place a wax paper square on the bottom and then place it in the steamer basket. Continue doing this for the remaining biscuits.

  12. Make sure that there is about 1 1/2 to 2 inches between each biscuit in the steamer basket. These need room to rise and may need to be steamed in batches depending on the size of your steamer. Steam these for 10 minutes.

  13. Once they are done, carefully remove them and let them cool slightly before making the sandwiches.

  14. To make the sandwiches, gently open the buns and spread a little sweet chili sauce on both sides. Then add a piece of lettuce, a few green onions, the stir fried chicken, and some shredded carrots. Then they are ready to serve. This makes 8 steamed sweet chili chicken sandwiches, enjoy!
