Take a break from the same-old mashed potato side dish. This dish goes perfect with turkey or pecan chicken and is a great Christmas or Thanksgiving dish.
Ingredients
3 cups sweet potatoes, cooked, peeled and mashed
1 cup sugar
1 stick plus 1/3 cup butter, melted and divided
2 eggs, slightly beaten
1 teaspoon extract
1/3 cup all-purpose flour
1 cup brown sugar, packed
1 cup pecans, finely chopped for garnish
Instructions
1. Mix sweet potatoes, sugar, one stick butter, eggs and vanilla.
2. Place in a greased 2-quart baking dish.
3. In a separate dish, combine flour, remaining butter and brown sugar together.
4. Spread flour mixture over sweet potato mixture.
5. Sprinkle pecans on top and bake at 350F for 40 minutes.
6. Cool and serve.
