Homemade Fruit Rolls
Guest Author - Lisa Babick

Greek Salad

Forget that sugary stuff you get at the store. This homemade fruit roll is not only healthy but fun to make and a perfect cooking activity for a child's party. Try making your own homemade taffy for another fun party activity. You can also make apricot fruit rolls by substituting 5 ounces dried apricots for the dried apples and omitting all other ingredients.

Ingredients

5 ounces dried apple chunks
1/2 tablespoon light brown sugar
2 tablespoons water
1 teaspoon gelatin

Instructions

1. In a blender or food processor, puree the apple chunks with brown sugar until the mixture resembles chopped nuts.
2. Put the water in a small bowl and sprinkle in the gelatin. Let stand for 5 minutes, then set the bowl in a small saucepan filled with simmering water and let the gelatin dissolve. Alternatively, you can place the bowl in a microwave and heat for 30 seconds or until dissolved.
3. Once the gelatin has dissolved, slowly add it to the apple puree and mix well.
4. Shape the puree into a ball and place it on a large sheet of plastic wrap or wax paper. Gently flatten it with your hand into a square shape.
5. Place another sheet of plastic wrap on top and gently roll out the puree into a thin square-like sheet about 1/16 of an inch thick (it should be transparent when held up to the light).
6. Rest the fruit roll on a wire rack and carefully remove the top sheet of plastic wrap. Let stand in a warm place to dry.
7. After eight hours or so, turn the fruit roll over, gently remove the bottom sheet of plastic wrap and let dry for another 8 hours.
