Cupcakes with Lemon & White Chocolate Frosting
Lemon is such a sweet and light flavor that is perfect for spring. This basic vanilla cupcake recipe is sweetened with a lemon syrup and a white chocolate and lemon frosting. However, this recipe has just enough lemon to be subtle and not overpowering. The vanilla cupcake recipe is a great base recipe for other cake and cupcake recipes. Hold on to it for future baking. The frosting and flavor combinations are endless.

Vanilla Cupcakes with White Chocolate Lemon Frosting Recipe

Vanilla Cupcake Recipe
Makes 24 cupcakes


1 cup butter, softened (2 sticks of butter)
2 cups flour
2 teaspoons baking powder
1 1/2 cups sugar
4 eggs
1 cup milk
1 tablespoon vanilla


1. Preheat the oven to 350 degrees.
2. Line a cupcake pan with cupcake papers.
3. Combine the flour and baking powder in a small bowl and set aside.
4. Cream the butter and sugar in a large bowl until smooth.
5. Add eggs one at a time, beating after each one.
6. Add vanilla.
7. Add milk and flour gradually, alternating between the two.
8. Bake for 20-25 minutes or until toothpick comes out clean.

Lemon syrup Recipe


3/4 cup of sugar
1/2 cup of water
2 tablespoons lemon juice


1. Combine ingredients in a sauce pan over low heat until sugar is dissolved.
2. Spoon syrup over cupcakes.
This can be done at any time but best when they are still warm.

White Chocolate Lemon Frosting Recipe
Frosts 24 cupcakes


1 cup butter, softened (2 sticks of butter)
2 cups confectioners’ sugar
3/4 cup white chocolate chips
1 tablespoon lemon extract


1. With a mixer cream the butter and sugar together until smooth.
2. Melt the white chocolate chips either on low heat in a saucepan or in the microwave.
3. Add the lemon extract to the white chocolate.
4. Add the white chocolate to the butter mixture and beat until smooth.
5. Use immediately to frost cupcakes that have cooled completely.
