The hijacking missions are marked with a truck symbol. You're told where the truck is going to be, then have to go out and get it and bring it back to its destination. You have a time limit on this, to get to the car - but once there, you just bash it repeatedly and take it home again. We like to shoot the driver in the head so the car itself isn't damaged, since you have to make it back home with that vehicle.
