Creating a Sandwich Meal
First, find that one food item that you would love to have in your meal. Then, build your meal around that. Here's how the process works.
Just back from a short road trip, I looked at the large club rolls resting comfortably on my counter. We bought them at our vacation destination. Club rolls aren't a usual part of my diet, but these rolls were too tasty to toss. What could I do with them to make a sandwich lunch? One thing that I know is that I adore grilled club rolls. I would start with that idea.
I opened the refrigerator to check it out. Hmmm, there was turkey sausage. Nope, I was in the mood for something light. Oh-ho! The log of goat cheese was just begging to be used. The leftover tomato slices would be good with goat cheese. So would grapes. My sandwich meal was coming together!
I sliced the club roll horizontally with a serrated knife. After that, I poured some extra virgin olive oil into a small iron skillet. I grilled the rolls in that green-gold oil until they had a crunchy, golden brown surface. While they grilled, I assembled the rest of the meal.
On a small plate I placed the tomato slices and a sweet cluster of grapes. The grilled roll pieces were added with the grilled side up. On the warm roll halves, I spread a good amount of goat cheese. A small bowl of cooked leftover broccoli and cauliflower rounded the meal out.
I had a delicious sandwich meal made from leftover ingredients. It had carbs and protein. Olive oil added phenolic antioxidants. There were brightly colored fruits and vegetables adding their fiber and antioxidant properties. Tastes ranged from creamy, to acidic, to sweet. Textures included crunchy and soft.
If you have a craving for a certain sandwich meal, take yourself to the store and buy the ingredients. However, often unique meals come from combining creativity and leftover ingredients. You might be surprised with the mouthwatering combinations that you discover when you raid your pantry and fridge.
