Bacon Ranch Cauliflower Salad Recipe

Cauliflower makes a wonderful base for a delicious salad. This salad's taste will remind you of a loaded baked potato, but without the carbs! The white cauliflower with small bursts of color is a treat for the eyes, as well as the taste buds! This salad uses commonly found ingredients.
I found a lovely large fresh cauliflower, and I broke it into smaller, bite-sized pieces. Then, it was time to blanch the cauliflower. The 4 cups of cauliflower pieces went into a microwave safe dish with a lid. I added a quarter cup of water to the dish, and then I covered it and placed it into the microwave. The microwave was set for 5 minutes at full power. Then, I let the covered dish stand for 10 minutes. I drained the water and cooled the cauliflower in the refrigerator. This softened the cauliflower slightly. After it was cool, the cauliflower was ready for salad prep.
Bacon Ranch Cauliflower Salad Recipe
Ingredients:
4 cups of blanched cauliflower florets
1/2 cup of Greek yogurt (I used the ALDI brand.)
1/2 cup of sour cream (I used the ALDI brand.)
1/2 cup of mayonnaise (I used the ALDI brand.)
1/2 cup of chopped chives or scallions
1/2 cup coarsely grated carrots
1/4 cup finely chopped pepper (I used poblano for a little kick of heat, but bell peppers work, too!)
1/4 cup real bacon bits
1/4 cup finely chopped celery leaves (optional)
2 tablespoons + 1 teaspoon Ranch dressing mix (You can use the Hidden Valley powder, but I used Best Choice.)
Method:
In a large bowl, dump the blanched cauliflower in. then spread the yogurt, sour cream, and mayonnaise across the top. Spread the chives, carrots, bacon bits and celery leaves over the wet ingredients. Stir to mix. Sprinkle the Ranch seasoning powder more or less evenly across the top of the salad, and then mix well. Store the Bacon Ranch Cauliflower Salad in a covered bowl for up to 3 days. You may also add chopped celery, onion, pimentos, sunflower seeds, or grated cheese.
Cauliflower naturally pairs well with any toasted cheese, grilled sausage, or juicy pork. This salad is tasty with grilled sandwiches or wraps. It's perfect for a family picnic or a potluck dinner. Plus, it is so easy to make. Try some soon for a real taste treat.
