If you need a quick and easy meal, this Burrito with Enchilada Sauce can be cooked in the microwave. Here are instructions for an individual burrito. It is a tasty recipe that can be made with ingredients from your cupboard. This is perfect for when you are away at college and don’t want a lot of leftovers. It also works well for those who want to fix a quick dinner for one.

Burrito with Enchilada Sauce Recipe


1 flour tortilla
1/3-1/2 cup of refried beans (I use LaTiara Mexican Style Refried Beans.)
2 tablespoons of sharp cheddar cheese
2 tablespoons of chopped onion
Additional fillings, if desired (green chilies, jalapenos, meat, corn bean salad)
1/4-1/2 cup enchilada sauce (I use Old El Paso.)
2 tablespoons or more of shredded cheese for topping

You may want sour cream, guacamole, shredded lettuce, salsa, and chopped tomatoes, if desired, for topping the burrito after baking.


On a plate, lay the flour tortilla flat and spread the refried beans on it. Sprinkle the onions and cheese evenly over the beans. Roll the tortilla up into a burrito. Cut the burrito in half and place both halves into a microwave safe bowl. Spoon the enchilada sauce over the burrito halves. Sprinkle cheese on top of the enchilada sauce. Cover the bowl with a microwave safe plate. Cook on high in your microwave for 2 ½ to 3 minutes. Let the bowl stand, covered, for 10 minutes. Carefully remove the plate from the bowl. Add your desired toppings.
