Salmon and Mushroom Quesadilla Recipe
2 low carb tortillas
1/4 cup smoked salmon
1/4 cup mushrooms
1 tsp black pepper
dash cayenne pepper
1/3 cup shredded cheese
1 Tbsp canola oil
Dice the salmon and mushrooms. Place one tortilla on plate, spread salmon and mushrooms on it. Sprinkle on peppers. Add on cheese. Microwave 45 seconds to set. Add 2nd tortilla on top. Oil a skillet, put in quesadilla and add dash of oil on top. Cook 2 minutes a side to brown. Chop into sixes and enjoy with sour cream!
Carbs per serving: 8g
This is a delicious lunch or supper - a treat for someone in induction, and a perfect count for someone in the full program! It is for some a decadent, luxury meal - but it's healthy for you.
