Maple Mayo Grilled Chicken Sandwich Recipe
A recent shopping adventure led me to discover my new favorite condiment. It's Vermont Maple Balsamic Vinegar. Here's my favorite way to use this bliss in a bottle, maple mayo.

Today's recipe features maple mayo in a richly flavored chicken sandwich. Use real butter to grill the bread. It does make a difference in the flavor.

Maple Mayo Grilled Chicken Sandwich Recipe


2 slices Ezekiel Sesame Bread
butter (Use the real deal!)
1 slice of Swiss Cheese
Thinly sliced roasted chicken breast (I used a rotisserie chicken.)
1 tablespoon of mayonnaise
1 teaspoon Vermont Maple Balsamic Vinegar
fresh organic baby salad greens


Butter one side of each slice of bread. Place them, buttered side down, in a cold, heavy skillet. Place the slice of Swiss cheese on one slice of bread. If you want warm chicken, put that on top of the Swiss cheese. Cover the skillet and turn on the heat to medium. Grill the bread until it is your desired brown color. I grilled mine for 5 minutes, turned off the heat, and let the sandwich continue cooking for 2 more minutes. All pan and stove combinations are different, so use your good judgement about how long to grill.

While the sandwich is grilling, mix the mayo and vinegar in a small cup, like a custard cup. Set it aside.

Pull off the pan lid and transfer each piece of grilled bread to a plate. If the chicken is not already on the sandwich, add it now. Then, use half of the maple mayo to cover the bare piece of bread. Spread the rest of the maple mayo onto the chicken. Add the greens to the top of the chicken, and close the sandwich. Slice the sandwich in half. That's it! Easy does it, but what a sandwich it is! You could add a couple of strips of crispy bacon, if you really want to "gild the lily."

Here's a sandwich that is easy to make, but it tastes like you fussed over it. The maple mayo makes all the difference between a good sandwich and a great sandwich. If your local stores don't carry the Vermont Maple Balsamic Vinegar, you can put The Tasteful Olive into your search engine. Find their website and order a bottle from them. It's worth your time and money to find this delightful condiment for your kitchen. I don't know how I lived without it.
