Zatarain's Wonderful Fish-Fri Review
Zatarain's Wonderful Fish-Fri is a purely corn-based coating mix. It is finely ground corn that has been enriched with ferrous sulfate, niacin, thiamin, mononitrate, riboflavin, and folic acid. Did I mention that it is gluten free? In the gluten free mode, I like to mix my coating mix in equal measure with yellow cornmeal. That gives a real down-home crispy, crunchy coating.
Catfish nuggets are the cheap part of the catfish. They are not fillets, but kind of like the flaps that are left when you clean the fish. These irregularly shaped pieces have a slightly different texture than the fillets and tend to curl up when they are fried. I love to fry them and use the nuggets for sandwiches slathered in tartar sauce and served on soft rolls. They are also good in a wrap with some coleslaw.
Fried Catfish Nuggets Recipe
½ cup Zatarain's Wonderful Fish-Fri
½ cup yellow cornmeal
1 ½ teaspoons of Old Bay Seasoning
½ -1 pound of fish
Oil to fill your pan to 1 inch deep (I used canola oil.)
Follow the preparation and frying directions for fish on the back of the Zatarain's Wonderful Fish-Fri. Drain the oil from the fried nuggets on paper towels.
Serve in a hoagie with spicy tartar sauce. You add your favorite condiments. Some suggestions are butter lettuce leaves, shredded iceberg lettuce, coleslaw, pepper rings, Pico de Gallo, or sliced tomatoes.
This is a tasty mix to use on any fish, it doesn't have to be just catfish nuggets. Since Zatarain's Wonderful Fish-Fri is made from corn, you want to be sure to use it by the date on the package. If you keep it past the "use by" date, it can get a little rancid flavor, since corn does contain oil. Make sure to check the date when you buy it at the store. The only time this has happened at our house was when an opened bag got buried in the spice cabinet. Trust me, the Zatarain's Wonderful Fish-Fri won't last long enough at your house to go bad. It's just that good!
