BOLLER (Danish Dumplings)

BOLLER  (Danish  Dumplings)
4 tbsp. butter or margarine
2/3 c. flour
1/2 c. boiling water
2 eggs
1 tsp. salt
1 tsp. sugar
1/2 tsp. nutmeg

Bring butter and water to a boil. Add flour all at once, stirring continuously. Cook until mixture leaves side of pan. When cool, add seasoning and eggs, one at a time, beating quickly. Drop by teaspoonfuls into boiling salted water or broth. Dip spoon into hot liquid after dropping each dumpling, so the mixture will not stick to the spoon. Do not use a cover. Cook 4-5 minutes and they are ready for soup. Makes 22 dumplings.
