When I was a girl, the most exotic items in the produce department were artichokes, eggplants, and avocados. With the many new produce items from all over the world, avocados no longer seem exotic…but they haven't lost their charm.

Slightly sweet, velvety, and buttery, avocados are also a nutritional powerhouse. The USDA shows that a cup of avocado contains 234 calories. This is fewer calories than a comparable amount of many types of candy. Avocados are filled with monounsaturated fat. This type of fat is believed to help lower the bad cholesterol. Monounsaturated fat allows the body to process fat soluble vitamins. Avocados are also a good source of fiber and potassium.

The versatile avocado is tasty when it's just spooned right out of the shell directly into the mouth. Slice or chop an avocado to enhance a green salad. Whirled in the food processor with other ingredients, it is an integral part of many smoothies. However, if you want to see an avocado really shine, add it to a sandwich! From the simple sandwich to the elaborate sandwich creation, sandwiches benefit from the addition of avocado. Here are some ideas to get you started.

*Smoked Swiss on rye with avocado slices, mayo, lettuce, and tomato.

*Tofu salad wrapped in a warm flour tortilla with avocado slices, and alfalfa sprouts.

*Cheese quesadilla with thinly sliced bell pepper, onion, summer squash, and lettuce with a side of guacamole.

*Grilled salmon, avocado slices, dill mayo, and alfalfa sprouts on a croissant.
*Havarti, smoked turkey, avocado, and spinach leaves on grilled rye bread.
*Bacon, tomato, butter lettuce, avocado slices, and mayonnaise on San Francisco Sourdough.
*Loin of pork, jalapenos, avocado, and tomatoes in a telera.
*Dill sauce and avocado slices on cold chicken served on a sourdough bun.
*Smoked salmon spread on pumpernickel toast and topped with thinly sliced tomato and avocado.
*Crispy corn tortilla with refried beans, pork chunks, melted cheese, guacamole, lettuce and Pico de Gallo.
*Chicken salad wrap with avocado slices, and spring mix greens.
