Grains & Quinoa Salad Review
Would you like to add some grainy goodness to your meals? How about a product that functions equally well as a wrap filling, salad, or casserole main dish? An addition to the Betty Crocker Suddenly Salad Select group is Grains and Quinoa Salad with cranberries and almonds. It's a tasty way to supplement those easy-to-make dishes when cooking time is limited. I purchased this product at Costco in a package of four pouches.

The grains that the Suddenly Salad people work with are brown rice, parboiled red rice, quinoa, and lentils. There is a packet of cranberries and almonds to stir in, as well as a seasoning packet. Sometimes, if I don't want the sweetness of the cranberries, I choose to leave them out and use the seasoning packet on cereal or a mixed salad. Waste not, want not! This is an excellent dish for Meatless Monday wraps. or you can add cooked chicken to it for a heartier wrap. Include your choice of cooked or raw veggies to add taste and texture.

The grains are in a flow-through cooking pouch that you pop into boiling water. Boil it for 17 minutes and finish the dish by stirring in the seasonings and your favorite mix-ins. The package gives complete directions that are easy to follow. However, I do it my way! I fish the pouch out of the boiling water with a large slotted spoon. Then, I carefully cut the top off of the bag and dump it into a bowl without rinsing in cold water. Did I mention that I have always had asbestos fingers? If you do it my way, rather that the safer directions on the box, you must be extremely careful. It is easy to burn yourself. After pouring the cooked grains into a bowl, add the dressing. Stir the packet together with one tablespoon of water and one tablespoon of oil; I use Kirkland extra virgin olive oil. Then, stir in the cranberries, almonds and any other mix-ins. It's just that simple! I highly recommend this product for ease of use and good taste.

Wrap Sandwich:

On a warm flour tortilla, place shredded cheese of your choice down the middle of the tortilla. Add warm or chilled Grains & Quinoa Salad on top of the cheese. You may add your preferred meat to the salad or layer it on top. Top with any desired greens and veggies. I like my veggies shredded for this wrap. Carrots, celery, and summer squash work well. Squirt a bit of ranch dressing over the whole thing and wrap it up like a burrito. Serve your wrap with a green salad or fruit, chips, and cookies.


When you have a group of people who include those with vegetarian eating habits and folks who eat meat, this is a great way to make wraps. Your guests have basically the same food, but tailored to their individual tastes. For a large group, you could lay it out on a buffet with warm tortillas in a tortilla warmer, cold or warm Grains & Quinoa Salad, with a variety of veggies, cheeses, meats, and dressings. What a terrific way to take care of each of your guests!
