Chinese Poached Chicken Recipe
Poaching chicken is an easy and healthy way to make a delicious meal. In this recipe boneless skinless chicken breasts are poached in a delicious Chinese red broth and then served sliced. With accompaniments of rice and steamed vegetables this makes a healthy and delicious meal, enjoy!

3 boneless skinless chicken breasts
1/2 tsp salt
5 green onions
2 inch piece fresh ginger
2 cloves garlic
3 cups chicken broth
1/4 cup light brown sugar
1/4 cup soy sauce
1/4 cup shao hsing wine
1/8 tsp black pepper
2 star anise

  1. Remove as much fat from the chicken as possible and then lightly sprinkle it with salt and let it sit at room temperature while preparing the other ingredients.

  2. Rinse the green onions under cold running water and dry them thoroughly. Cut off the base and remove any wilted pieces. Then dice the remaining stalks and set them aside.

  3. Remove the skin from the ginger and slice it into thin slices and set them aside.

  4. Next, peel the garlic by firmly smashing it with the side of a knife. Then set the whole cloves aside.

  5. In a pot with a tight fitting lid that is large enough to fit the chicken breasts in a single layer, mix together the chicken broth, brown sugar, soy sauce, shao hsing wine, black pepper, star anise, the 2 cloves of garlic, and the ginger slices.

  6. Heat this mixture on high stirring constantly until the sugar melts.

  7. Once the sugar melts, turn the heat off and add the chicken to the pot in a single layer. Make sure that each breast is completely covered with the liquid. Add more broth if necessary. Then return the heat to high and bring the broth to a boil.

  8. Once it boils, turn the heat to low, cover, and let it simmer for about 10 minutes, or until the chicken breasts are cooked through. This time will vary depending on the thickness of the breasts.

  9. When the chicken is done, carefully remove each breast, making sure not to get any of the scum that may have floated to the top of the liquid, and place them on a plate.

  10. To serve, slice them into 1/4 inch slices, placing them on a large platter.

  11. Spoon over some of the liquid just to moisten. Again making sure not to get any of the scum from the top of the liquid, and garnish with green onions.

  12. This is great served with rice and a side of steamed vegetables. Makes about 3 servings of poached Chinese chicken.
