Golden Lentil Vegetable Soup Recipe
My husband and I love the flavors of Mediterranean cooking. Plus, we are trying to eat less meat and more legumes. One of our favorite restaurants, the Holy Land Café, has many vegetarian dishes. It doesn't matter whether we order vegetarian food or dishes with meat, we always order the lentil soup.

Their lentil soup is golden and luscious. It is a simple vegetarian soup made with red lentils, a few spices, and vegetables. Believe it or not, red lentils turn golden as they cook! This soup isn't completely smooth, but it isn't chunky, either. It warms our bodies and our spirits to sit and sip this wonderful soup. Here is a recipe for a soup that is very much like the soup that we enjoy at Holy Land Café in Kansas.


Golden Lentil Vegetable Soup Recipe

Ingredients:

3 cups red lentils
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
1 teaspoon garlic salt
1 teaspoon seasoning salt
1 teaspoon sea salt
1 teaspoon turmeric (optional)
1 large bay leaf, or more, depending on your taste.
1 teaspoon peppercorns
pepper to taste (I used ¼ teaspoon white pepper. You may use more pepper, including black pepper.)
12 cups of water

Method:

Add all of the ingredients into your slow cooker. Set your slow cooker on low and cook for 8 hours. After 8 hours, remove the bay leaf. Adjust the seasonings to suit your taste. You may serve the soup as is, or blend it until it is smooth.

Blend the soup in small batches. Reserve a little bit of the unblended soup to mix in with the blended soup. It adds a tiny bit of texture. If you like completely smooth soup, just blend it all!

When you are blending hot liquid, make sure that the lid is on tightly. Also, put a thick kitchen towel over the lid of the blender and hold it down. You do not want hot liquid flying around your kitchen. Of course, you can always cool the soup before blending.


Golden Lentil Soup will last several days in the refrigerator. This soup freezes well. Adjust the water and spices before serving, if you freeze it.
