The winter holidays bring opportunities for a lot of time in the kitchen cooking for family and guests. In the United States, turkey is a prized holiday meat. It is good for other times of the year, too. Turkey, especially when you find it on sale, is an economical choice for cooking meals ahead of time. After the initial turkey feast, plus a couple of days of turkey leftovers, you can use the remaining turkey for casseroles, soups, and sandwiches. Wow! What sandwiches turkey makes!
