Pinto Beans Recipes for ADD Nutrition
This tasty, whole grain cornbread has what it takes to complete the pinto bean protein. It is yummy stuff! The recipe is pretty forgiving. Just mix it up and don't overbeat it. This recipe makes 8 generous servings. You can even use it as a dessert by spreading a little coconut oil or butter on it and drizzling some honey on the cornbread.
Whole Grain Cornbread Recipe
Preheat the oven to 350 degrees F.
½ cup whole rye flour
½ cup whole wheat flour
½ cup sprouted whole wheat flour
1 cup whole grain cornmeal (I was out of cornmeal, so I threw a bunch of popcorn into my Vitamix and ground it up. I KNOW that it is whole grain!)
¼ cup turbinado sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 ¼ teaspoon salt
1 ¼ cup sour milk
¼ cup oil
2 tablespoons honey
Mix the dry ingredients together in a medium bowl. In a 2-cup measure, stir together the milk, oil, honey, and eggs. Pour the liquid ingredients into the dry ingredients. Stir to mix both the dry and liquid ingredients, until they are just combined. Pour into a greased 10 inch cast iron skillet. Bake at 350 degrees F. until a toothpick inserted into the center comes out clean, the edges are brown, and the cornbread has started to pull away from the pan. This takes about 30-35 minutes.
If we don't eat all of the cornbread, I put the leftovers in a freezer bag and pop it into the freezer. When I am short on time, I pull some frozen beans and cornbread out of my freezer. I can serve the beans as plain pintos, or I can make them into soup. It's as easy as heating it in the microwave!
Pinto Bean Romaine Wraps
This is a delicious way to eat Mexican food and to lower your carb intake. Coarsely chop one medium bell pepper, one sweet onion, and enough garlic to make you happy. You could also add a little chopped hot pepper of your choice! In a heavy skillet, sauté the veggies in a couple of tablespoons of olive oil or butter. Add enough water to cover the veggies, then cook them, covered, until the veggies are soft. Add 4 cups of pinto beans and their liquid to the veggies. Cook over low heat for 30 minutes, stirring occasionally to make sure he beans don't stick. Remove the beans from the heat and mash them with a potato masher. You might need to add a bit more water. These don't have to be completely smooth. Put a cup of mashed beans into a bowl. Stir in shredded cheese. The cheese helps complete the protein.
Serve the beans and cheese with 6 washed and dried large Romaine lettuce leaves. Spread the beans and cheese on the leaves. Top with salsa and eat the Pinto Bean Romaine Wraps like tacos. You could also add any other toppings that make you happy. Guacamole comes to mind! Serve your wraps with a side of cornbread for a filling meal.
