Minty Cabbage Salad for ADD Nutrition
But where are the sandwiches that can help keep the ADD meal plans organized? Eastern Mediterranean dishes at our school include both chicken and a combination beef and lamb meat that is made into gyro sandwiches. The side dishes make that gyro a hearty meal. A recent day saw lentils, baba ganoush, tabouli (tabbouleh), and a minty cabbage salad as side dishes. I fell in love with the minty cabbage salad and asked the chef how it is made. He told me the ingredients, and I wrote a recipe for a dish that tastes just like the salad that we ate. It is so easy to make and it just tastes fresh!
When you are using sandwiches to help organize your meals and provide nutrition that helps to keep the negative symptoms of ADD under control, you will surely want to put this recipe in your "favorites" pile. Cabbage is a good source of fiber. It contains many vitamins and minerals, including Vitamins C and K. Cabbage contains B vitamins, too. B6, B1, and B2 are all part of a cabbage's healthy nutrition profile. It also has manganese, choline, phosphorus, folate, copper, calcium, magnesium, niacin, and iron. Cabbage is one of the best things that you can eat to promote good health. Garlic also helps keep you healthy. This recipe is a significant source of Vitamin C. Lemon juice contains a lot of this vitamin, along with many of the same minerals as cabbage.
While the salad is simple, the shred of the cabbage is crucial. It needs to be finely shredded to accept the dressing correctly. Does that sound a bit strange? Yes! However, dressing clings differently to a long, very thin shred than it does to a small chunk or thick shred. It is worth the time to get it right. We used a Cuisinart mandolin on the thinnest slicing blade. If you cannot shred it thinly with the equipment that you have, Dole makes an angel hair coleslaw. That's about how thinly shredded that the cabbage needs to be. Use 2-3 bags of the Dole Angel Hair Coleslaw for the recipe. I always think that fresher is better, but on this recipe, thinner is better. Thin and fresh is best!
Minty Cabbage Salad Recipe
1/3 cup freshly squeezed lemon juice (Only FRESH lemon juice, no bottled, please!)
¼-1/3 cup oil (I used a combination of sunflower and grapeseed oil, but any mild oil will work.)
1 tablespoon finely minced fresh garlic
1 tablespoon dried crushed mint
½ teaspoon sea salt
6-8 cups of finely shredded cabbage. (If you buy pre-shredded cabbage, buy the Dole Angel Hair Coleslaw package. Depending on how highly flavored you want the salad, use 2-3 bags.)
In a 2 cup measure, mix together the freshly squeezed lemon juice, oil, garlic, and mint. As you add the mint, rub it between your fingers. This makes the pieces smaller, but it also releases oils from the mint to make the dressing more flavorful. Finally, add the sea salt, stir, and set the dressing aside.
Add the cabbage to a large bowl and drizzle the dressing over it. Toss gently to coat each shred with the delicious dressing. I used my clean hands. This may be served immediately or refrigerated. Use it within 2-3 days. The longer that the cabbage stands in the dressing, the tangier that the salad will taste. If you want a stronger flavored salad, use the smaller amount of cabbage. A larger volume of cabbage will yield a lighter taste.
As we were sampling the first time, my husband said, "This reminds me of something; what does It remind me of?" I told him that the flavor is reminiscent of dolmas or dolmades, those tasty little bits of lemony goodness. If you like dolmas, you will enjoy this salad.
