Apple Bread
Greek Salad

When I was a little kid, my cousin who lived downstairs from me used to make the most awesome apple cake. She moved many, many years ago and we lost contact but I keep trying to find a recipe that matches her awesome recipe. This one comes pretty close, although it's a bread and not a cake. Make several of these and freeze them for the upcoming holidays and to serve to unexpected guests.

Ingredients

3/4 cup vegetable oil
1 cup brown sugar
2 eggs
1-1/2 cup green apples, unpeeled and chopped
1/4 cup chopped walnuts, optional
1 tablespoon grated lemon zest
1-1/2 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
1/4 teaspoon salt

Instructions

1. Preheat oven to 350F.
2. In a large bowl, beat together 3/4 cup vegetable oil, 1 cup brown sugar and 2 eggs. Stir in the chopped apples, walnuts and grated lemon zest.
3. In another bowl, sift together the flour, cinnamon, nutmeg, baking soda and salt. Add to apple mixture, blending until moist. Do not over mix.
4. Pour into a greased and floured loaf pan. Bake for 60 minutes until brown and bread springs back when touched.
