Truffles Recipe


Evaporated milk truffles using red wine or Bailey's Irish Cream are wickedly sinful. The easiest way to make these truffles is to shape them into balls and roll in cocoa or sprinkles. However, another option is to use a chocolate mold, chocolate candy melts, and the truffles as the filling or center. If using a mold you will need to fill each cavity halfway with melted chocolate, and then fill with the truffle mixture. You may want to shape the truffle in a small ball or square before dropping in the mold. This would depend on the shape and size of the chocolate mold you selected. Cover with melted chocolate to the top and freeze for about 10 minutes.

Depending on how many truffles you make you will most likely have a bit of evaporated milk left over. To avoid being wasteful there are many uses for evaporated milk. It is a rich option to add to your morning coffee or in macaroni and cheese. It can replace almost any recipe that requires milk.

Red Wine Truffles Recipe
Makes about 10-12 truffles

Ingredients:

3/4 cup of a good quality dark chocolate, chopped
2 tbsp. evaporated milk
2 tbsp. red wine (I used my favorite, Cabernet)
Cocoa or sprinkles to roll the truffles in

Directions:

1. In a small sauce pan over low heat combine the evaporated milk and the chocolate.
2. Stir until melted and smooth.
3. Stir in the red wine.
4. Refrigerate for a few hours or overnight.
5. Using a melon baller scoop out the chocolate and roll into a ball. (about 1 inch)
6. Roll each ball in sprinkles or cocoa.

Irish Cream Truffles Recipe
Makes about 10-12 truffles

Ingredients:

3/4 cup of good quality milk chocolate, chopped
1 tbsp. Bailey's Irish Cream
2 tbsp. evaporated milk
Cocoa or sprinkles to cover the truffles

Directions:

1. In a small sauce pan over low heat combine the evaporated milk and the chocolate.
2. Stir until melted and smooth.
3. Stir in the Irish cream.
4. Refrigerate for a few hours or overnight.
5. Using a melon baller scoop out the chocolate and roll into a ball. (about 1 inch)
6. Roll each ball in sprinkles or cocoa.

Enjoy and sweeten the soul with chocolate!
