Salmon with Old Bay Mayo Sandwich Recipe

Salmon with Old Bay Mayo Sandwich Recipe
Wild caught salmon fillets are delicious in sandwiches. Easy to prepare in just minutes by grilling in a heavy skillet, they add solid nutrition to a tasty sandwich. A four ounce serving has just 100 calories and 20 grams of protein. It also provides Omega 3 fatty acids. These fatty acids are essential for proper metabolism.

Salmon with Old Bay Mayo Sandwich Recipe

Extra virgin olive oil (I used Kirkland brand.)
4 ounce salmon filet for each person (I cooked two.)
1/3 cup mayonnaise
1 teaspoon Old Bay Seasoning
¼ teaspoon onion powder
1 teaspoon Inglehoffer’s Stone Ground Mustard
4 drops of balsamic vinegar
1 tablespoon Organic Blue Agave syrup
1 bolillo or other tender white buns.

In a heavy pan, like an iron skillet, with a lid, add enough olive oil to cover the bottom of the pan. Heat the pan on high until a drop of water dances. Then, add the salmon with the curved side down. Turn the heat down to medium-low. Cover the pan with the lid and cook for 4 minutes. After 4 minutes, uncover the pan and use a spatula to turn the salmon to the flat side. Cook the salmon, uncovered, for 4 more minutes, or until the fish flakes easily.

While the fish is cooking, measure the mayonnaise into a small bowl. Spray the measuring cup with non-stick cooking spray to make the mayonnaise fall out of the cup more easily. Add the Old Bay Seasoning, onion powder, mustard, vinegar, and syrup. Stir the ingredients together. This is enough Old Bay Mayo for two generous sandwiches. Let the salmon rest in the pan for 5 minutes.

Split the bolillo and add the Old Bay Mayo to the cut sides. I used one large bolillo for two sandwiches. Place the warm salmon inside the bolillo.

The Salmon with Old Bay Mayo Sandwiches go well with Sauteed Mixed Greens, Marinated Vegetable Salad, or Green Bean Salad. These foods are delicious, but they are even more than that! The salmon and vegetables make a nutritional powerhouse lunch or dinner.
