Here Marilu shows us how easy and fun it is to prepare healthy meals for family and friends for special occasions.


This is a tasty side dish for any meal and adds color to the table.

INGREDIENTS
1/2 cup chopped fresh basil
4 tablespoons lemon juice
2 tablespoons olive oil
2 cloves garlic, finely chopped
1/2 teaspoon salt
1/4 teaspoon pepper
2 pounds green beans, fresh or frozen.
lemon wedges for garnish

DIRECTIONS
1. Combine basil, lemon juice, olive oil, garlic, salt and pepper in a medium-sized bowl. Cover and chill 1 hour.
2. If beans are fresh, wash beans; trim ends and remove strings. For frozen or fresh beans, cook in boiling water to cover 10 minutes or until crisp-tender; drain well.
3. Let marinade come to room temperature while beans cook. Pour marinade over beans. Cover and let stand at room temperature 45 minutes.
4. Serve beans at room temperature.
