One of my health conscious wife's "top of the list" vegetables is verdolaga. Also known as purslane and pigweed, this flowering dark green leaf vegetable is healthy and nutritious. One of Maria's favorite ways of preparing it is in a dish that she calls "Verdolagas with Crispy Pork."
