Here is a good way to get bread that is fresh and has a lot of fiber. This is a dense and tasty loaf. Make it yourself! This recipe is easy enough for a kid to make.
Ingredients:
1 cup bread flour
2 cups whole wheat pastry flour
1/2 cup of ground flax meal
1 teaspoon salt
1 teaspoon yeast
1/3 cup Greek yogurt
1 tablespoon honey
Water to combine with the yogurt and honey to make 2 cups of liquid
Method:
In a bowl with a lid, add the flours, flax, salt, and yeast. Stir to combine the dry ingredients. Mix the yogurt, honey, and water together to make 2 cups of liquids. Pour the liquid into the dry ingredients and stir it together. The handle of a wooden spoon is great to stir with. When all of the ingredients are combined, cover the bowl and set it aside for 8 to 24 hours. Yes, that is HOURS.
After dough has rested for 8-24 hours, spray a metal loaf pan with non-stick spray. Put the dough into the loaf pan and pat it down. Cover with foil and let it rise until doubled, about 2 hours. Preheat an oven to 450 degrees F. Put the loaf pan into the heated oven and bake for 30 minutes. Butter the top crust. Put the bread back into the oven for 10-15 minutes, until the internal temperature reads 200 degrees F. Cool on a rack. Store the bread covered. Slice it as needed.
