Butternut Squash and Sweet Potatoes
These two nutrient-rich vegetables will keep you fortified for the cooler days!
I put together a meal suggestion that I think you will enjoy. These two veggies, baked, are delicious alone, making a nutritious snack, or eating in place of a dessert. I’ll show you how I do it, below!
I checked, and this one meal will provide you with every necessary vitamin, mineral, and antioxidant known to prevent and fight cancer. It is a very balanced meal, is high in fiber and should be easy to digest.
However, leave off anything you know you must avoid. Broccoli is high in Chromium, which levels out blood sugar. If you are diabetic, just eat the squash and sweet potato alone if you want, they are both naturally sweet.
Cool Weather Meal:
Grilled Salmon with Butternut Squash
Grilled Salmon, brown rice, baked butternut squash or baked sweet potatoe. Serve with Broccoli salad, or Spinach salad, with tomatoes. A sweet and sour dip with red pepper would be great to serve with the main course. Top it off with a slice of whole grain wheat bread.
To prepare a butternut squash: Cut in half, scoop out seeds and clean middle. ( ½ for each person). Make a mixture of brown sugar, cinnamon, melted butter, and vanilla extract and spoon into the center of each half. Wrap in foil and place on a baking sheet and bake at 350 degrees in center of oven for 45 min. to 1 hr. Mixture:(1/2 cup brown sugar, pinch cinnamon, tsp. butter melted, ¼ tsp. vanilla extract)
Sweet potatoes can be wrapped in foil and baked, and garnished the same way. It’s a delicious treat!
