Apple Zucchini Muffins and Eating Well with ADD
Greetings from the Land of OZ!
Our blessed rain last weekend was wonderful. The land isn't as parched here, and I can walk across our grass without hearing it crunch. What a relief!
Have you ever been pushed into creativity by a lack of an ingredient when you were making something? I started baking our weekly muffins, and found that we had very little whole wheat flour. So, I threw oatmeal into the food processor, and suddenly, we had a lot of oat flour. These Apple Zucchini Muffins were the result of that burst of creativity!
Why do people eat processed foods? These foods don't taste as good as homemade, but they are convenient. Apple Zucchini Muffins are the ultimate convenience food. Easy to make, and used for snacks and meals, they don't have the additives and preservatives that can cause negative symptoms with ADD.
