Here are some nutrition suggestions I'll call:
Warm-weather quick “Pick-Me-Ups”!
These are just a couple of suggestions my mother would fix with meals during warm days here in the Southern USA. I still indulge often!
Pear Salad
Dark lettuce leaf (your choice)
½ pear (fresh or canned)
Dollop of Mayo or Yogurt in center
Shredded cheese (grated sharp New York taste best!)
Place rinsed and dried lettuce on plate, then pear. Stuff and cover with a little cheese.
Voila! It’s delicious with a meal or favorite sandwich. It is very light on the digestive system, and great to re-hydrate with.
You can also use Whole cranberry sauce instead of the pear (w or w/o cheese). Add a slice of onion (be sure you can tolerate); a scallion or “pencil” long green onion is a great addition for flavor. Cut up and sprinkle on top!
Banana Sandwich
Bananas give much needed Potassium, so this is great in place of a Snicker’s bar any day!
2 slices whole wheat bread
Light mayo (if choose) on one half
Peanut butter on other half
Slice one med. Size banana long-ways (or round if desire)
This is a nutritious and quick pick-me-up for you for your kids!
