I hope you had a splendid time over the Easter weekend. This week I want to introduce a light and fluffy Indian breakfast dish; idli. Safe on the stomach and tasty on the tongue, idli has survived several hundreds of years and is certainly one of India’s best known dishes. Not all Indian food is fatty and idli is one good example of a nutritious dish.

Idli – South Indian Cake

Having said so much, let me give you my special recipe to make idli batter that transforms into light and fluffy cakes on the tray. Try this out and enjoy! Don’t forget to let me know how your idli turns out!
