Checkmate! A banana pudding that looks and tastes terrific!
When you need a dessert that looks special, but your time is limited, consider this.
Ingredients:
1-12 ounce container cool whip topping
1-14 ounce can of sweetened condensed milk (do not use evaporated milk)
1– 8 ounce package of cream cheese, softened
2-cups milk
1-5 ounce box instant French Vanilla pudding (you can substitute banana pudding if you cannot find French Vanilla)
7-9 bananas, sliced
2 bags Pepperidge Farm Chessman cookies
Directions:
Spray a non-stick spray in the bottom of a 9” x 13” glass dish.
Line the bottom of the dish with 1 bag of cookies and then a layer of banana slices.
Use a large bowl, and combine the milk and pudding and blend it well using a hand held mixer.
In a medium sized bowl combine the cream cheese and condensed milk together and mix them until they are smooth.
Fold the whipped topping into the cream cheese mixture.
Now, stir the cream cheese mixture with the pudding mixture and mix until well blended.
Spoon/pour the mixture over the cookie and banana layer.
Arrange another layer of the cookies on top.
Refrigerate until ready to serve.
Pink Salad
This is one of those family favorite type recipes that is easy to make and tastes great. Everyone in my family loves “Pink Salad”!
1 carton cool whip
1 carton of cottage cheese
1 package strawberry-banana jell-o (do not make the jell-o, you will just use the powder in the box)
1 bag frozen whole strawberries
3-5 bananas
In a really big bowl, stir the cool whip and the cottage cheese and then stir in the jell-o powder.
Slice the bananas and stir them in.
Now, stir in the frozen strawberries and cover and put the bowl in the fridge.
I know- it is just too easy!
This is easy to do in other colors if you need a salad that is a specific color to round out a meal.
Orange salad -Substitute orange jell-o powder, drained pineapple, and drained mandarin orange slices.
Blue salad - Substitute blueberry blast flavored jell-o, frozen blueberries and or frozen blackberries.
Yellow or green salad - Substitute drained pineapple chunks, banana slices, frozen mango or star fruit, use lemon or lime jell-o.
This is also one of the few recipes that can be easily made low-cal. Use sugar free cool-whip, sugar free jell-o, and fat-free cottage cheese.
