Hopefully this delicious sandwich will remind you of the great food in N’awlins, and will become a favorite way to eat leftover Cajun-style roast beef. Cajun flavors are highly addicting, and you’ll find yourself eating more than you plan to eat, which may be bad for your diet, but very good for your satisfaction and well-being. Roast Beef Po’Boys are available at dozens of restaurants in New Orleans, and they are very good. These Cajun Pot Roast Po’Boys may be even better, and you don’t have to go all the way to Louisiana to enjoy them. It may be a good idea to double the pot roast recipe so that there will be enough to go around.
