Cajun Pot Roast Po'Boys Recipe

Even though many of us groan at the thought of serving leftovers, some leftovers are actually better than the original dish. These Cajun Pot Roast Po’Boys may be even better, and you don’t have to go all the way to Louisiana to enjoy them. It may be a good idea to double the pot roast recipe so that there will be enough to go around.

2 cups Cajun Pot Roast with Gravy, shredded

6 6" French rolls
Mayonnaise
Shredded Lettuce
12 tomato slices
  1. Mix the pot roast with enough gravy to moisten; heat in a small skillet over low heat.
  2. Cut the French rolls lengthwise almost through and open, spread with mayonnaise, top the bottom half with shredded lettuce and two tomato slices, then top with the hot roast beef mixture.
