Karen Hancock has been cooking, eating, reading about, dreaming about, and writing about Food, her favorite subject, for over 40 years. She grew up in Utah with a stay-at-home, fabulous-cook Mom who taught her to cook, and inspired her to learn everything she could about food. She started her own catering business, Eclectic Epicurean, about 10 years ago and also teaches cooking classes to women’s, religious, community, and private company groups. Karen is a flight attendant for a major airline and travels the world, tasting new dishes, then recreating those dishes at home to use in her catering business, cooking classes, and of course, BellaOnline. Taste testers include her husband, four grown children, and two grandchildren.

Although she loves to be in the kitchen, cooking, traveling several days of the week, and running a business while at home gives her a minimum amount of time to prepare dishes for her family, prepare recipe tests for her classes, and spend time with her busy business-owner husband.

Cutting prep time by utilizing modern gadgets and developing new ways to make prep faster without sacrificing nutrition or flavor has been her goal, and as the Quick Cooking Editor she will present articles, recipes, and timesaving tips designed to help busy women everywhere prepare quick meals that are delicious, nutritious, and attractive in a minimum amount of time.
