Chicken in Coconut Sauce Recipe

If you happen to be traveling to an international destination on Delta Airlines, you will most likely be offered a choice of dinner entrees in main cabin. There is always a pasta choice, and recently, another choice is Chicken in Coconut Sauce. This is not a typo: the Delta Chicken in Coconut Sauce is incredibly delicious! It’s so good, in fact, that I worked in my kitchen to clone that dish so I could let my family taste it. The Official Hancock Tasters love it as much as I do.

Although the following recipe for Chicken in Coconut Sauce is probably not exactly like the dish served on Delta, it is very close, and maybe even a little better because in this version, the chicken is grilled, which adds extra flavor. The luscious sauce has only four ingredients, the entire dish can be made in about 30 minutes – you can even grill the chicken a day or two ahead to save time. Make sure you start the rice cooker (or start the rice in a saucepan) before you start the sauce, so it will be ready to serve as soon as the chicken is done. It’s great served with stir-fry veggies.

Getting to taste Delta’s version of Chicken in Coconut Sauce is definitely worth booking your international travel on Delta Airlines, and it’s a great excuse to vacation in Europe.

6 Servings

1 1/2 pounds boneless skinless chicken breast halves, trimmed of fat, veins, etc.
Salt and freshly ground black pepper

3 13.5 oz. cans unsweetened coconut milk
1 1/2 - 2 tablespoons Thai red curry paste
Juice of 1 lime
1 1/2 - 2 tablespoons coconut palm sugar, or regular palm sugar, or brown sugar
  1. Sprinkle the chicken breast halves with salt and pepper; grill until almost cooked through (115° -120° on an instant read thermometer).
  2. Cool, then cut into 1" chunks; set aside.
  3. Whisk together the coconut milk, curry paste, lime juice, and sugar in a 3 quart saucepan.
  4. Bring to a boil and let cook until thick and reduced by half.
  5. Add the chicken chunks, stir, and let cook until the chicken is cooked through.
  6. Serve over rice.
