Slow Cooker Southern Ham & Vegetable Soup Recipe

Since spiral hams are so easy to serve, I usually have a ham bone leftover from a buffet sitting in my fridge waiting for me to make soup. This easy Southern Ham & Vegetable Soup uses popular southern vegetables: okra, tomatoes, cabbage, snap beans, butter beans, and corn, so itís a change from traditional vegetable soup; itís delicious and even quite substantial, too, especially if the ham bone is meaty.

This easy soup can be put together in the slow cooker in record time, since thereís no chopping involved; the vegetables called for are either frozen, canned, or packaged. As a bonus for those of us who ate a little too much over the holidays and are trying to lose a few pounds, this soup is low in calories.

Southern Ham & Vegetable Soup can be served over rice for a more substantial meal, and is best served with freshly baked cornbread or biscuits.

Southern Ham & Vegetable Soup


12 Servings

1 meaty ham bone
8 cups water
1 16 oz. package frozen cut okra
2 16 oz. cans diced tomatoes
4 cups packaged coleslaw mix or shredded cabbage
1/2 pound frozen cut green beans
3 cups frozen corn
1 16 oz. can butter beans, drained and rinsed
Salt and freshly ground pepper, to taste
  1. Place the ham bone in a 5-6 quart slow cooker.

  2. Add the water, okra, tomatoes, coleslaw mix, green beans, corn, and butter beans.

  3. Cover the slow cooker and cook the soup on low for 6-8 hours (3-4 hours on high).

  4. Add salt and freshly ground pepper to taste.
