This easy soup can be put together in the slow cooker in record time, since there’s no chopping involved; the vegetables called for are either frozen, canned, or packaged. As a bonus for those of us who ate a little too much over the holidays and are trying to lose a few pounds, this soup is low in calories.
Southern Ham & Vegetable Soup can be served over rice for a more substantial meal, and is best served with freshly baked cornbread or biscuits.
Southern Ham & Vegetable Soup

1 meaty ham bone
8 cups water
1 16 oz. package frozen cut okra
2 16 oz. cans diced tomatoes
4 cups packaged coleslaw mix or shredded cabbage
1/2 pound frozen cut green beans
3 cups frozen corn
1 16 oz. can butter beans, drained and rinsed
Salt and freshly ground pepper, to taste
- Place the ham bone in a 5-6 quart slow cooker.
- Add the water, okra, tomatoes, coleslaw mix, green beans, corn, and butter beans.
- Cover the slow cooker and cook the soup on low for 6-8 hours (3-4 hours on high).
- Add salt and freshly ground pepper to taste.
