Blueberry Pomegranate Vinegar Recipe

Blueberry Pomegranate Vinegar is quick and easy to make; it keeps indefinitely on the cupboard shelf, and can be used to make dozens of great salad dressings and sauces. Fancy fruit vinegars like this are available at specialty stores, but they are usually very expensive. Its worth it to spend 20 minutes to make it at home.
A recipe for Blueberry Pomegranate Dressing is included at the end of the article; its great on salads that include greens and fruit.

3 cups fresh or frozen blueberries
1 cup pomegranate juice
1 cup distilled white vinegar
1 cup sugar
  1. Bring blueberries, pomegranate juice, vinegar, and sugar to a boil in a medium saucepan.

  2. Reduce heat; simmer 10 minutes.

  3. Cool.

  4. Pour the mixture into a fine strainer over a bowl and let drain without pressing.

  5. Discard the solids and pour the vinegar into bottles.

  6. Store in a cool place.

Blueberry Pomegranate Vinaigrette

Makes 3/4 cup

1/4 cup sugar
1/4 cup blueberry pomegranate vinegar
1/2 teaspoon salt
Dash hot pepper sauce
Dash freshly ground black pepper
1/2 cup vegetable oil
  1. Measure the sugar, blueberry pomegranate vinegar, salt, hot pepper sauce, and pepper in a blender or food processor.

  2. Blend until well-mixed.

  3. With the motor running on low speed, slowly pour in the vegetable oil.

  4. Blend until the sugar is dissolved.

  5. Store in the refrigerator.
