3 cups fresh or frozen blueberries
1 cup pomegranate juice
1 cup distilled white vinegar
1 cup sugar
- Bring blueberries, pomegranate juice, vinegar, and sugar to a boil in a medium saucepan.
- Reduce heat; simmer 10 minutes.
- Cool.
- Pour the mixture into a fine strainer over a bowl and let drain without pressing.
- Discard the solids and pour the vinegar into bottles.
- Store in a cool place.

Blueberry Pomegranate Vinaigrette
Makes 3/4 cup
1/4 cup sugar
1/4 cup blueberry pomegranate vinegar
1/2 teaspoon salt
Dash hot pepper sauce
Dash freshly ground black pepper
1/2 cup vegetable oil
- Measure the sugar, blueberry pomegranate vinegar, salt, hot pepper sauce, and pepper in a blender or food processor.
- Blend until well-mixed.
- With the motor running on low speed, slowly pour in the vegetable oil.
- Blend until the sugar is dissolved.
- Store in the refrigerator.
