Call for Sweet Potato Recipes

The North Carolina Sweet Potato Commission is offering a recipe contest in conjunction with Taste of the South magazine. You may enter as many recipes as you wish, as long as each one is submitted separately.

They are looking for your original sweet potato recipes, including "at least 1 1/2 cups fresh sweet potato or one medium fresh sweet potato", with no canned or other kinds of potatoes included, and limited to eight ingredients or less, not including spices, etc.

Recipes will be accepted under the categories of:

Soups

Salads

Sides

Sweets

The winning entry in each of these categories will receive $500, with the Grand Prize winnerof $3,000 then chosen from these four.

This contest ends April 15, 2008. Be sure to read through these rules thoroughly before entering, as they wish to see detailed entries.

The sweet potato is an amazingly versatile food, rich in vitamins A and C, calcium, and potassium. They are low in calories, high in fiber, and quickly claiming a more dominant place in the "healthy foods" markets of today's world. For this reason, you may soon find it a more prominent ingredient in recipe contests to come, so you might want to keep some ideas in the back of your mind to play around with for future reference.

For retailers, the commission is also sponsoring a "Retail Display Contest", offering prizes ranging in value from $10 starbucks gift cards to the $1,000 cash Grand Prize.
