Holiday Sandwich Recipes Turkey Burger with Spiced Cranberry Sauce 1 lb. turkey meat, chopped or in strips 2 tbl. chives or scallions, chopped finely 1 egg, beaten lightly 1 clove garlic, crushed salt & pepper to taste 2 tbs. seasoned breadcrumbs oil for frying 1 loaf, sourdough bread romaine, red leaf or butter lettuce for service 8 slices mozzarella or provolone cheese Chop turkey meat coarsely. Place in food processor until finely chopped. Combine in large bowl with chives or scallions, egg, garlic, salt, pepper and bread crumbs. Mix and divide into four patties. Heat oil in large frying pan and cook patties over medium heat. 3 minutes each side until golden and cooked through. Drain on paper towels and keep warm in a low oven, wrapped in foil. Cut sourdough loaf into 8 slices - toast light and butter. Place 4 slices on serving plates. On each slice build sandwich. Start with lettuce leaves, then a turkey pattie, slice of cheese, spiced cranberry sauce and finally top with a second piece of toast. Yum! Here's a recipe for spiced cranberry sauce that will make this sandwich the talk of the town: Spiced Cranberry Sauce 1 tbl. butter 1/2 small onion, finely chopped 2 teas. honey 1/4 teas. pumpkin pie spice 1/2 teas. ground ginger 1/3 cup cranberry sauce 1 teas. balsamic vinegar Heat butter in small pan and add onion. Cook over medium heat for 3 minutes or until soft. Stir in honey, spice and ginger, cook for 1 more minute. Add the cranberry sauce and vinegar then, simmer gently for 5 minutes. Remove from heat and cool slightly. Here's a fun layered sandwich that is hearty and delicious and fun to get some of the children help you make: Holiday Dinner on a Bun 1 substantial dinner roll, preferabley a potato roll 1 slice bread 4 tablespoons turkey gravy 1/3 cup leftover stuffing or dressing 1/3 cup mashed potatoes 2 slices turkey breast 1 tablespoon cranberry sauce Soak the slice of bread in the gravy. Cut open the potato roll. Place one slice of turkey breast in the potato roll. Compact stuffing into a small round to fit the roll and place on top of turkey slice. Top with gravy-soaked slice of bread. Lay down second piece of turkey. Spread mashed potatoes on top. Drizzle with cranberry sauce. Replace top half of potato roll. Microwave for about 40 seconds. Enjoy!
