Herbed Goat Cheese Spread Recipe
Recently, I got together with a group of special friends for a family-style meal. Our potluck dinners are always a delight of discovery. I had a log of excellent goat cheese (chevre) from Costco hanging about in the refrigerator. Their Kirkland brand of chevre is reasonably priced and tasty. Knowing that this crowd loves a surprise, I brought a recipe that I was trying out. They ate the Herbed Goat Cheese Spread down to the last crumbly piece. I promised the fans of this herb laden chevre a written recipe, and here it is!
Herbed Goat Cheese Spread
Pinch of thyme (about 1/16 teaspoon)
½ teaspoon of dried tarragon
1 teaspoon dried parsley
1/8 teaspoon Italian herbs
¼ teaspoon onion powder
¼ teaspoon garlic powder
1 tablespoon soft butter
10.5 ounces of fresh and creamy goat cheese (chevre)
3 tablespoons milk
Crumble the dried herbs into a small flat bottomed bowl. Add the onion powder and garlic powder to the crumbled thyme, tarragon, parsley, and Italian herbs. Using the back of a spoon, press on the herbs until they are very small pieces, then incorporate the soft butter into the herb mixture. Continue using the back of the spoon as you mash the goat cheese, a little at a time, into the butter mixture. After about a third of the goat cheese has been mixed in, add a tablespoon of milk. Mash the milk and goat cheese together. Add the second third of the goat cheese and a tablespoon of milk. Work them into the herbed goat cheese. Finally, incorporate the last of the goat cheese and milk into the herbed goat cheese. Wrap the goat cheese in foil or put it into a covered container for at least 3 hours before you serve it. The flavors need time to develop.
You may pack this into a crock or small lidded container for serving. If you want a more elegant presentation, make several small logs (2 inches long by 1 inch in diameter) or balls (2-3 inch diameter) and roll them in a blend of dried herbs. A blend of 2 tablespoons of dried parsley, 1 tablespoon of dried tarragon, and one tablespoon of dried chives works well. Crumble the herbs together with your hands before rolling the cheese logs or cheese balls in the herbs. Pat them lightly into the cheese, so that they adhere to the sides. How many cheese balls and logs that get covered by this mixture depends on how thickly you pat the herbs on. If you run out, just make more. Store the cheese logs or balls in small plastic zipper bags or wrapped in foil.
This herbed goat cheese makes an outstanding simple sandwich on a hard roll or croissant. Add lettuce or fresh spinach leaves and tomato for texture. With a vegetable drink, smoothie or flavored tea and a piece of fruit, this is a lovely quick meal.
Served on crackers, with corn chips, or on a Kim’s Magic Pop, this herbed goat cheese spread is a winner with a party crowd! It goes well with fruit juice drinks or a sweet wine.
As always, this recipe starts out as mine, but you can certainly customize it to suit your tastes. Use more or less of the herb mixture. Change the mixture by adding your favorite herbs!
