I love iced cappuccinos. Unfortunately they usually have a high fat and sugar content associated with them which is something I (and you) can do without. While the odd one is a great treat, a daily ritual can pack on the pounds and clog up the arteries quickly.
With this dilemma in mind I decided I needed to develop my own cool coffee drink. This led to the birth of many variations of Moe's Mocha Refresher. What you will find here is my recent but probably not final concoction. I hope it helps to keep you cool through the hot days of summer and offers you a refreshing treat in the winter.
Ingredients:1 teaspoon instant coffee (Decaffeinated or not. Your choice.)
2 teaspoon Splenda (Optional -- if you are used the commercial sweet drinks you may need a little sugar.)
5 rounded teaspoons Carnation Lite Hot Chocolate
1-2tbsp boiling water
3/4 c skim milk
1 banana (Adds sweetness and keeps drink from separating.)
10 to 13 ice cubes
Directions:
Put the first three ingredients in a 1 cup measure. Add enough boiling water to dissolve the coffee, sugar and hot chocolate (about a tablespoon or two). Then add enough skim milk to fill 1 cup measure. Pour mixture into blender already filled with 13 ice cubes. Use crush ice feature followed by blend for 2 - 3 minutes until smooth. Pour into mugs.
This makes one really large serving for one or if you want to share, two smaller servings.
Enjoy this low cal drink with straw and no guilt!
Fun variation: add one to three tablespoons of Bailey's Irish Cream to mixture while blending. You will probably have to reduce milk accordingly.
