Greek Salads

Greek Salads

Salad is a fast, easy, and healthy way to make lunch or dinner. Salad is easy to pack and easy to eat. With meat, vegetables, cheese, and croutons or a side of bread, salad can be a main course that covers the four food groups. I like to think of salad the way I do soups- take a few basic ingredients, add some things you like, add some leftovers you have in your fridge, and add some special ingredients- and then you have a fast, easy, and healthy salad. Here are some recipes for Greek salads that you can make in a rush for a picnic, or even add your own ideas and take some extra time to make it extra special for a dinner party.

Easy Greek Salad with Chicken

Ingredients

Spinach leaves (rinsed and cut into medium pieces)
Boneless skinless chicken breast
1 cup feta cheese
6 roma tomatoes
cup black olives
cup capers
1 large red onion
3 tablespoons olive oil
4 hard boiled eggs
1 large cucumber (sliced into small rounds)
Red wine vinegar
Oregano
Sea salt
Freshly ground black pepper

Directions:
Rinse and pat dry spinach leaves. Place on cutting board and tear or cut into bite sized pieces. Set aside. Meanwhile, heat 2 tablespoons olive oil in skillet to medium heat. Sprinkle chicken with salt, pepper and oregano. Cook on both sides until no longer pink in the center. Find the biggest bowl you can and arrange spinach inside. Slice and arrange chicken on top of spinach. Slice Roma tomatoes, hard-boiled eggs, cucumbers, and red onion. Sprinkle the feta cheese, black olives, and capers on salad to your liking. Season with salt, pepper, and oregano. Drizzle with olive oil and red wine vinegar.

Cucumber, Onion, and Tomato Salad

Ingredients

3 large ripe tomatoes
1 large cucumber, peeled and sliced
1 large garlic clove grated
1 cups plain yogurt
1 onion, sliced
1 cup feta cheese.
Sea salt
Freshly ground black pepper

Cut the tomatoes into wedges and place in a large bowl. Slice onion in large rings, then cut the rings in half. Peel the cucumber and then slice into rounds. Add the onions and cucumber to bowl with tomatoes. In medium bowl, combine plain yogurt, grated garlic clove, sea salt, and freshly ground pepper. Stir until thoroughly combined and sprinkle with feta cheese. Sprinkle with salt and pepper to taste.
